Leslie Cooperband is an Extension Specialist in Sustainable Agriculture and Community Development within the Department of Human and Community Development at the University of Illinois. She is also a beginning farmer. Leslie and her husband Wes Jarrell are the owners of Prairie Fruits Farm just north of Urbana where they commercially produce farmstead goat cheese and organic tree fruit and berries.
